A Great Source of Healthy Fat!

This Avocado Pasta recipe is a lighter spin on a classic: Alfredo sauce! Using ingredients such as avocado and olive oil instead of heavy cream is a great way to “hide” some veggies and make sure the whole family enjoys a meal packed with healthy fats!

Avocado Alfredo Pasta with Chicken

Ingredients
  

Avocado Alfredo Sauce

  • 2 Avocado
  • 1/2 cup Milk of choice (I used 2%)
  • 1 Tbsp Olive oil
  • 1 tsp Fresh lemon juice
  • 1/4 cup Shredded parmesan cheese
  • 1/4 cup Fresh basil
  • Salt to taste (I left the salt out)

Seasoned Chicken

  • 1 Chicken breasts butterflied in half to create 4 thin cuts
  • 1 1/2 cups Plain panko crumbs
  • 1/2 cup Shredded parmesan cheese
  • 1 tsp Garlic powder
  • 1 tsp Dried oregano
  • 1/2 tsp Dried rosemary
  • 1/2 tsp Salt
  • 1/2 cup Olive oil

Pasta

  • Whole wheat rotini or penne

Instructions
 

  • Mix all Avocado Alfredo Sauce ingredients in a blender. Blend until smooth.
  • Bring pot of water to boil for pasta.
  • In a gallon-sized ziplock bag, combine panko, parmesan, garlic powder, oregano, rosemary, and salt. Zip bag and shake to mix well.
  • Place chicken breasts in ziplock bag. Seal and shake to coat well.
  • Heat 1/2 cup Olive oil in skillet. Cook chicken breasts in olive oil until golden brown and internal temperature reaches 165 degrees F.
  • While chicken is cooking, Cook pasta per package directions. Strain when finished. Pour pasta back into pot.
  • Pour avocado sauce over pasta and toss.

  • Slice cooked chicken breast into strips.
  • Using a ladle, scoop pasta into serving bowl. Top with sliced chicken, a pinch of parmesan cheese and a sprig of basil as a garnish. Enjoy!
